Employee wiped gloves with a used towel while handling food and continued food preparation. [CA] Discontinue wiping hands with a soiled towel while wearing gloves. Properly wash hands with soap, warm water and dry using single use paper towels as required prior to putting on gloves. -

Measured the following Potentially Hazardous Foods ( PHfs) at improper holding temperatures between 44F-48F. HEld inside prep table by the cookline (pooled eggs, cut tomatoes, raw shelled eggs, ham, cheese). Per manager all the items mentioned were prepared less than 2 hours ago. [CA] PHFs shall be held at 41°F or below or at 135°F or above. - Critical
K14Food contact surfaces clean, sanitized
Measured chlorine concentration in the 3-compartment sink at 0ppm while actively washing. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [COS] Employees readjusted the sanitizer solution in the 3-compartment sink. Final concentration measured at 100ppm. Employee was directed to rewash all the previously washed utensils that were not properly sanitized. -

Raw beef stored directly above ready to eat food inside walk in refrigerator. [CA] All food shall be separated and protected from cross-contamination. Store all raw meat or other raw products of animal origin below ready-to-eat food items. -
