Water temperature at the 3-comp sink was measured at less than 120F. [CA] Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at handwash sinks (100F). - Critical

1- Quat sanitizer concentration was measured at 0ppm at the 3-comp sink in the front area. and less than 200 ppm at the 3-comp sink in the back area. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [COS] There is some issues with the sanitizer plumbing in the 3-comp sink at the front, employee was able to refill the sanitizer container in the back area. Sanitizing will be done in the back 3-comp sink while the front 3 comp sink is being repaired. 2- Mold like substance build up inside the ice machine. [CA] Clean and sanitize routinely to prevent contamination.
